I completely deleted the scummvm folder from the launchbox folder (don't forget to copy your games to another place if you have them in there!!). I'm not familiar with ScummVM's MT-32 emulation, but MT-32 + Sound Blaster works fine for me with Munt. My own scummvm emulator was in another folder entirely.

For some weird reason, I cannot seem to click on or interract with any objects in my inventory except the tweezers.

Most SCI games (like gabriel knight) and some other games have only been able to run through scummvm 2.0.0 or later. the problem you're having is that launchbox uses an older version of ScummVM, namely 1.8.1 or something. So far I've at least been able to answer your question : I've been having this exact problem myself and have been looking for some solutions.
